Baked White Sweet Potato Fries

Sweet potatoes are known for their gorgeous deep orange color that has become synonymous with their delicious flavor. But did you know that there are some varieties of sweet potatoes that have a pale yellow flesh, more like a Yukon Gold potato?  It’s true!  Some varieties, like the White Delight and the O’Henry, look more like typical white potatoes, but don’t taste like them.  They are a little less sweet and have more starch than typical orange sweet potatoes, and they are terrific when baked as fries!  If you or someone you love prefers their fries to look like regular french fries, this recipe might be a perfect choice.

Ingredients:

4 large sweet potatoes that are a white-fleshed variety (and of course, you can make this recipe with any sweet potatoes you like!)

2 T. olive oil

1 ½ t. smoked paprika

1 T. black Hawaiian salt 

Directions:

Preheat oven to 375F

Peel sweet potatoes and slice into equal-sized long rectangular pieces. Try to avoid leaving tapered ends as they will become too crisp while the thicker parts are still baking.

Place potato slices on a rimmed baking sheet lined with parchment paper and drizzle with olive oil. Toss potatoes with your hands until thoroughly coated in oil. Arrange into a single layer without touching. Sprinkle with paprika and salt and put in oven.

Bake for about 20 minutes, turning once, or until fries are crisp and golden. Remove from oven and allow to cool for a few minutes before serving.

Three Cheese & Bacon Stuffed Mini Sweet Peppers

Need a last minute appetizer? This versatile recipe comes together in under 15 minutes, but looks and tastes like it took a lot longer.

Ingredients:

  • 1 bag mini sweet peppers in assorted colors

  • 6 oz. goat cheese
  • 6 oz. ricotta cheese
  • 3 T. fresh thyme leaves, stems removed

  • 4 strips thick-cut bacon, cooked and crumbled
  • salt and pepper, to taste

  • 1 oz. hard Parmesan cheese, freshly grated

Directions:
Wash peppers and pat dry. Cut each pepper in half lengthwise, leaving the stem intact. Remove seeds and membranes from each pepper half and discard. Set aside.

In a small bowl, combine goat cheese, ricotta cheese, thyme leaves, and bacon, and sprinkle with some salt and pepper. Combine ingredients thoroughly. With a small spoon, fill each pepper half with the cheese and bacon mixture and arrange on a rimmed baking sheet covered with parchment paper. Top each stuffed pepper half with grated Parmesan cheese and pop into the oven under a preheated broiler set to ‘high.’

Broil for approximately 5 minutes or until the cheese begins to brown and peppers start to blister. Remove from oven and place on a serving plate. Serve immediately.

All-American Potato SaladYou will love making this traditional American potato salad for all of your potlucks, picnics, and oven-free dinners this summer!

All-American Potato Salad

All American Potato Salad

Serves: 8-10

Ingredients:

  • 5 pounds Idaho Potatoes
  • 2 cups mayonnaise
  • 1/2 small onion diced
  • 1 Green Pepper seeded and diced
  • ¼ cup Sweet Relish (optional) adds a sweetness
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon celery salt

All-American Potato Salad

Directions:

  • Peel and dice potatoes.  Bring a large pot of water to a boil, boiling potatoes for about 20 minutes or until fork tender.
  • In a large bowl, combine chopped potatoes, mayonnaise, chopped onion, green pepper, and relish.
  • Season with salt, pepper, and celery salt. 
  • Mix well. Cover and refrigerate for several hours or overnight.

Fresh Strawberry Mango Salsa

Take advantage of the availability of fresh, juicy strawberries and soothing, smooth mango with this beautiful and delicious recipe!

Fresh Strawberry Mango Salsa

INGREDIENTS
1 cup strawberries-diced
1 cup mango-diced
1 Tablespoon sugar
1/4 red onion – diced
1 jalapeno – seeded and minced 

2 Tablespoons cilantro-chopped
3 Tablespoons honey
3 Tablespoons lime juice
Optional – pepper to taste

Fresh Strawberry Mango Salsa

DIRECTIONS
1. Add the strawberries, mango, sugar, onion and jalapeno into serving bowl. Cover and chill until serving time.
2. Just before serving, mix together the cilantro, honey, lime juice, and pepper and add to the salsa. Toss gently.
3. Serve immediately.

This recipe can be served with tortilla chips, cinnamon pita chips, bruschetta, corn chips or even as a dessert topping.
